Israel Pérez choreographs the elegant dining room and strives daily to offer a magical dining experience that makes every guest feel special, catering to the needs of loyal diners and making newcomers feel like old friends. The consummate professional, his attention to detail creates a flawless evening. At the helm since 2004, Pérez has an innate understanding of Chef Hunnel’s cuisine, and coaches his staff to offer diners an exquisite wine they may never have tasted that matches the innovative cuisine. A significant part of his job is heading up daily discussions of wines and assessing his staff’s knowledge of the grape. Pérez is a native of Mayaguez, Puerto Rico, and attended the University of Puerto Rico. He has traveled the world seeking food and wine knowledge to share with his staff. Pérez honed his skills at Walt Disney World® restaurants for more than 20 years at the helm in dining rooms at the California Grill, Narcoossee’s, Cítricos and Artist Point. He holds a first-level certificate with the Master Court of Sommeliers.
